Especially, the Thai cuisine makes use of pandan leaves as a flavouring agent. Botanical name of pandan leaf is ‘Pandanus amaryllifolius’, which belongs to the family of screwpines. Its pleasant aroma is a reason why it is added to desserts and cakes in Thai, Filippino, Indonesian, Chinese, Malaysian and Singaporean cuisines. In Indian cuisine, pandan leaves are added to biryani and pulao rice dishes. Pandan leaves are used dried or cooked for its aroma.
