charsiu chicken recipe

Serves 4 people 

Ingredients:

Chicken marinade:

  • 750g deboned uncooked chicken thighs
  • 3 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 1 tbsp light soy sauce
  • 1 tsp pure sesame oil 
  • 1 tbsp sugar
  • 1/3 tsp ground white pepper
  • 2 cloves fresh garlic (minced)

Cucumber Salad:

  • 1 packet of mini cucumbers chopped into 2inch pieces or 1 large cucumber chopped into medium cubes
  • 2 tbsp of salt
  • 3 tbsp seasoned rice vinegar
  • 2 tsp of sugar
  • 1 tbsp of soy sauce
  • 2 cloves of garlic finely chopped
  • 1/2 fresh red chilli deseeded and finely chopped
  • 5 sprigs of coriander finely chopped
  • 1 tbsp roasted white sesame seeds

Method:

1. Add all the ingredients for the chicken marinade together and set aside for a minimum of 30minutes in the fridge.
 
2. Place all the chopped cucumber pieces into a bowl.  Sprinkle the salt over and set aside for 20minutes. 
 
3. To complete the cucumber salad, rinse the salted cucumber in water, then gently pat dry. Now add the soy, seasoned rice vinegar, garlic, coriander, chilli and sugar. Mix well. It can be eaten immediately or kept in the fridge until serving. 
 
5. Set your airfryer to 200degrees and spread the chicken out to cook for 18 to 20mins until chicken is fully cooked. Sprinkle some roasted sesame seeds and serve with some rice and cucumber salad.
