    • 1 ginger (200g)
    • 1-2 lemons (230g
    • 1.5 cups of sugar (270g),
    • 25g baking soda (25g)
    • a pinch of salt

To Serve

    • 100g Sugar (can be substitute with 25g Honey)

Method

  • Step 1: Prepare a bowl of water, enough to cover the lemon(s)and soak the lemon(s) for 30 minutes. Take it out and rub with salt to remove the wax on its skin and rinse with water.
  • Step 2: Peel the ginger, get a dry cloth, wrap over the lemon(s) and ginger to take away any moisture which they might have (this should prevent it from mould, and then cut them into slices.
  • Step 3: Use a large bowl, mix ginger, lemon, with a cup of sugar evenly, then put into a dry jar, and pour half cup of sugar on top, covering it therefore no air can interact with the ginger and lemon.
  • Step 4: Put the lid on, and leave it at room temperature for half a day, refrigerate it for 3 days, so you can use it later.
  • Step 5: When serving, add a spoon of this ginger lemon tea mixture to a cup of hot water/red tea, mix it and let it sits for 3 minutes, then enjoy a cup of warm and delicious homemade ginger lemon drink/ tea. Add honey for taste. (You can adjust the amount of mixture to use in your own wishes.)
  • *If you would like to serve this immediately, please cook the ginger in water/tea for 15 minutes and then add lemon for 2 minutes before serving.
