Ingredients:
Cake Ingredients
- All-purpose flour - 2 cups
- Wholemeal flour - 1 cup
- Unrefined coconut sugar - 1.5 cups
- Baking powder - 2 tsp
- Baking soda - 2 tsp
- Ripe avocado - 2
- Nature's Charm Evaporated Coconut Milk - 2 cups
- Vanilla extract - 2 tsp
- Apple cider vinegar - 1/2 tsp
Frosting Ingredients
- Dairy-free butter - 200g
- Powdered sugar, sifted - 3 cups
- Nature's Charm Chocolate Fudge Sauce - 1/3 cup
- Vanilla bean extract - 1/2 tsp
Order Ingredients
Method
- Step 1: Preheat the oven to 1800C. Line three 8" round cake pans with parchment and grease the sides.
- Step 2: In a stand mixer, mix the dry ingredients together. In a separate bowl, whisk together mashed avocado, milk, sugar, vinegar and vanilla. Gradually add the wet ingredients to the dry ingredients, mixing at low speed, mix until the batter just comes together.
- Step 3: Divide the batter evenly between the 3 pans and bake for 25-30 mins or until toothpick comes out clean. Let cool completely.
- Step 4: Add in a dash of cornstarch, the water and stir. Allow the apples to cook for a few minutes until the sauce has thickened and the apples have softened, but aren't mushy. Set the filling aside to cool.
Make the Frosting
- Step 1: Add butter in the stand mixer bowl with the paddle attachment. Whip on medium to high speed for about 2-3 minutes. Stop mixer and add the sifted powdered sugar. Mix on low speed, then add in chocolate fudge sauce and mix until incorporated. Scrape the bottom and sides of the bowl and then mix on high speed until smooth.
