Bacon and Kimchi Fried Rice Recipe
Serves 2 people
Ingredients

3 to 4 slices of streaky bacon cut into small pieces (approx 1cm)

1 small onion diced

2 pieces of scallion chopped

1 egg, beaten

150g-200g kimchi, chopped

400g cooked Jasmine Rice

1 tbsp Gochujang
-
1tsp sesame oil
-
1 tbsp soy sauce
-
1 tbsp groundnut or vegetable Oil
Method
Step 1: Into a non stick pan or wok, add the groundnut oil. Once the oil is hot, add the onion and bacon. Stir fry for 3 to 4mins until the onion and bacon is golden brown in colour.
Step 2:Add the rice into the pan and stir fry together for 2mins. Move the rice and all other ingredients to one side of the pan and then add the beaten egg. Stir fry the egg for a minute then mix in with the rice and other ingredients.
Step 3:Add the kimchi, gochujang, sesame oil and soy sauce. Mix well. Sprinkle with the scallions. Ready to serve.
Tips:
• For the cooked rice, it is best to use day old rice. It means the rice is a bit drier and easy to stir fry with.
• When taking the premade kimchi from the tub or packet, reserve 2 tbsp of the kimchi juice to add into your kimchi fried rice. This adds more flavour.
