- Bacon – 2 pcs (cut into small pieces)
- Mat Kimchi – 125g
- Korean Red Pepper Powder – ½ tsp
- Salt – ½ tsp
- Pepper – ½ tsp
- Cooked White Rice – 125g
- Butter – ½ Tbsp
- Eggs – 2pcs (beated)
- Water – 60ml
- Salt – ½ tsp
- Mozzarella Cheese – 100g
- Scallions – 1 pc (chop into small pieces)
- Sesame Seeds – Sprinkles
- Sesame Oil – a few drops

Method
- Step 1: Stir-fry the bacon pieces on medium low heat until it turns golden brown.
- Step 2: Pour the Mat Kimchi into the bacon pieces and stir-fry for another 3-4 minutes.
- Step 3: Then, add Korean Red Pepper Powder, Salt, Pepper and Rice and stir-fry for another 2 minutes.
- Step 4: Prepare another non-stick pan and melt the Butter on medium low heat. Place the Kimchi Fried Rice ( prepared in Step 3) in the middle of the pan and remove it from the heat. Shape the Kimchi Fried Rice into a volcano shape.
- Step 5: Mix the beated Eggs, Water & Salt. Pour the mixture on the top of the Volcano. Keep the pan on medium-low heat.
- Step 6: Spread the Mozzarella Cheese on the Egg Mixture and cover the pan with lid. Cook for another 5 minutes.
- Step 7: Sprinkle the Scallions, Sesame Seeds & Sesame Oil onto the dish and it’s ready to serve.
