Method

Step 1: Peel the sweet potatoes, then steam them until soft.
Step 2: Blend sweet potatoes in a food mixer until they are mashed. Add salt, sugar, and corn oil. Keep mixing to combine well.
Step 3: Mix the glutinous rice flour and the corn flour in a bowl. Pour half of the flour mix into the sweet potatoes and mix well. Add the rest of the flour mix and blend to combine well.
Step 4: Pour a little bit of hot water into the mixer and keep kneading until the dough is firm.
Step 5: Take the dough out and separate it into small bite-sized portions. (Aim to keep the dough layer as thin as possible.)
Step 6: Put a nian gao cube (year cake cube) in each dough ball. Wrap the dough around the cube and roll them with both palms until the cube is well-hidden inside the dough.
Step 7: Heat oil in a saucepan over low heat. When the oil is slowly brought to a boil, add the year cake balls one by one into the pan. Stir occasionally to prevent them from sticking together.
Step 8: Keep frying until the balls turn into a golden-brown colour. Taken them out and drain them on a large plate lined with 2-3 layers of paper towels.
Step 9: Serve warm. Enjoy!
