Hong Kong Style Fried Tofu (Easy Party Snack)

- 2 packages – Jan Jan fresh tofu (950g x 2), cut into bite-sized cubes or triangles
- 1 teaspoon – salt
- 1 teaspoon – Golden Dragon Salt and Pepper Seasoning
- 2 – shallot, minced
- 2 – garlic, minced
- 3 sprigs – spring onion, chopped
- 2 – red chilli pepper, chopped
- Some – cornstarch
- 2 tablespoons – sunflower oil or oil of your choice

Directions for Use
To make this popular summertime side dish, you shall:
Step 1: Cut the tofu into bite-size cubes or triangles. Mince shallots and garlics. Chop spring onion and red chili peppers. Set aside.
Step 2: Bring a big pot of water to a boil. Add 1 teaspoon salt and tofu. Cook for 3 to 4 minutes.
Step 3: Remove tofu and drain. Dry tofu completely with paper towels by lightly pressing the excess water out.
Step 4: Dredge the tofu cubes evenly in flour. Shake off any excess.
Step 5: Heat 1 tablespoon oil in a wok over medium-high heat. Pour in the tofu cubes and pan-fry until light golden brown in color. Remove tofu on a plate lined with paper towels for later use.
Step 6: Heat rest of the oil in the same wok over medium-high heat. Add shallot, garlic, and red chili pepper. Stir-fry until fragrant.
Step 7: Add tofu, spring onion, and golden dragon seasoning. Stir-fry until well-combined.
Step 8: Serve immediately. Enjoy!
