Jackfruit Chilli recipe

Ingredients:

  • 1 565g can Chef's Choice Young Green Jackfruit in Brine
  • 1 tablespoon olive oil
  • 1 red onion, finely diced
  • 30g taco spice mix
  • 1 400g can kidney beans
  • 2 400g cans diced tomatoes
  • Avocado, lime, and parsley to serve (optional)

Method

  • Step 1: Drain the jackfruit and gently break apart the chunks, squeezing out any excess liquid as you go. Set aside.
  • Step 2: In a large pan, heat the olive oil on high before adding the red onion.
  • Step 3: Once the onion is translucent, add the jackfruit and taco spice mix, stirring until the spice mix has been spread evenly throughout the pan.
  • Step 4: Drain the kidney beans and add to the pan, along with the tomatoes.
  • Step 5: Stir well and cook for about 5 minutes on high before reducing to low heat and allowing to cook for a further 15 minutes, stirring occasionally.
  • Step 6: When it's ready, the jackfruit should have broken down and become nice and soft.
  • Step 7: Remove from the heat and serve immediately with any garnish you'd like.
