Ingredients:
- Cooked Jasmine Rice – 2 Cups (Cooled Down for 3 hours)
- Chicken Fillet – 1 pc
- Onion – 1/4 pc
- Scallion – 4 pcs
- Garlic – 2 cloves
- Eggs – 2 pcs
- Sunflower Oil – 1Tbsp + 1 Tbsp
- Fish Sauce – 1 Tbsp
- Light Soy Sauce – 1 Tbsp
- Lime Juice – 1/2 lime
- Ground White Pepper – Sprinkle

Method
- Step 1:Chop the Onion, Scallion and Garlic into small pieces. Slice the Chicken Fillet into thin pieces.
- Step 2:Saute the Onion & Garlic in Sunflower Oil over medium heat until the Onion becomes a bit transparent. Add in the Chicken Fillet and stir-fry for another 2 mins.
- Step 3:Bring the heat to High and add in the Cooked Rice. Stir-fry for 30 seconds and season with the Fish Sauce, Light Soy Sauce, White Pepper and Lime Juice. Set Aside.
- Step 4:Heat 1 Tbsp of Sunflower Oil over high heat in another pan. Add the Eggs and scramble it until its almost done and add back the rice.
- Step 5:Add the Scallions. Mix well and its ready to serve.
