Ingredients
- Silken tofu – 1 block (Cut into small 1cm square pieces)
- Minced Pork – 100g
- Green Onion/ Scallion – 2-3 stalks ( Chopped finely)
- Fresh Ginger – 5g (sliced into thin pieces)
- Fresh Garlic – 3 cloves (Chopped finely)
- Dried Chilli – 2g (Chopped finely)
- Szechuan Pepper Powder – 5 tsp
- Bean Paste – 1 teaspoon
- Vegetable Oil – 10ml
- Cold Water – 400ml
- Light Soy Sauce – 1 tbsp
- Salt – 1/2 teaspoon
- Sugar – 1/2 teaspoon
- Corn Starch – 20g
- Cold Water – 30ml
- Sesame Oil – few drops

Method
- Step 1: Add the vegetable oil and stir-fry the onion, ginger and garlic over high heat, then add the pork and stir fry until half cooked, approximately 2-3 mins.
- Step 2: Add the dried chilli, Szechuan pepper powder and the bean paste. Stir fry for 1min and then add in the tofu with 400ml of cold water into the wok.
- Step 3: Bring the dish to boil, stir in the light soy sauce, salt and sugar. Cook for another 2 mins.
- Step 4: In a small bowl, mix the Corn Starch & 30ml of water and add into the wok.
- Step 5: Cook the tofu until the sauce becomes slightly thickened. Add few drops of Sesame Oil and the dish is ready to serve with some cooked rice.
