Miso Ramen Recipe

Ingredients

100g of fresh shitake mushrooms

4 sprigs of fresh scallion finely chopped ( separate out the white part and green)

3 cloves of garlic finely chopped

1 tbsp of miso paste

2 tbsp of soy sauce

5g of dashi seasoning
-
500ml of water
-
2 nests of frozen ramen or any ramen noodle of choice

10 Crabsticks, defrosted to room temperature

4 tbsp of shelled frozen edamame beans defrosted to room temperature

1 small bunch of fresh Pak choi washed and cut into 4

Roasted white sesame seeds to garnish (optional)
Method
- In a heavy based medium sized pot, add a tablespoon of oil. When the oil is hot, add in the white part of the finely chopped scallion, the shitake mushrooms and garlic. Stir fry for 3 minutes.
- Add in the miso paste and soy sauce. Stir fry for another minute before adding in the water and dashi seasoning. Simmer on low heat.
- In a separate pot, boil some hot water. Cook the ramen as per instructions on the packet. Divide the cooked noodles into two bowls and place the crabstick and edamame on top.
- Now quickly cook the pak choi in the miso soup for 2 mins, before placing them on top of the noodles, along with the shitake mushrooms and lastly pouring the soup into the bowls and garnishing them with some fresh scallion and sesame seeds.
- Ready to serve.
