Ingredients:
- Lotus Seed Paste – 600g
- Salted Duck Egg Yolks – 20pcs
- Egg Wash – 1 egg yolk (slightly beaten)
- Mooncake Mould – 1pc (size: 70g)
Mooncake Skin Ingredients:
- Golden Syrup – 175g
- Groundnut Oil – 45g
- Alkaline Water – 1 tsp
- Plain Flour – 228g

Method
Preparing Mooncake Skin:
- Step 1:Whisk the Golden Syrup, Groundnut Oil and Alkaline Water until they are thoroughly blended.
- Step 2:Add in the All Purpose Flour, mix and fold the mixture until soft and sticky dough is formed. Then set aside and cover with the cling film to prevent it from drying.
Preparing Egg Yolk:
- Step 1:Preheat the Oven at 175 °C
- Step 2:Crack the Salted Duck Eggs and retain the Egg Yolks. Slightly rinse the Egg Yolks to clean off the film covering the yolk.
- Step 3:Bake the Salted Egg Yolks in the oven for 5 minutes, and then set aside.
Assemble the Mooncakes:
- Step 1:Divide the Lotus Seed Paste approximately 25g each and shape it into a ball.
- Step 2:Flatten the Lotus Seed Paste ball, wrap one Salted Egg Yolk in it and shape it into a ball again. Repeat this step until all the Salted Egg Yolks are finished.
- Step 3:Flatten the Mooncake Skin Dough, wrap the Salted Egg Yolk Lotus Seed Paste ball in it and shape it into a ball. Repeat this step until all the fillings are finished.
- Step 4:Slightly brush a mooncake mould with flour, place the mooncake dough into the mooncake mould.
- Step 5:Carefully place the mould on a floured surface. Press the handle down until you can't move it any further.
- Step 6:Pull the handle up and the mooncake is formed with pattern. Repeat this step until all the mooncake dough is finished.
Let’s bake the Mooncake:
- Step 1:Preheat the Oven at 190 °C
- Step 2:Bake the mooncakes until the edges of the mooncakes become golden, it takes about 10 minutes.
- Step 3:Remove the mooncakes from the oven and set aside for 15 minutes. Slightly brush a thin layer of egg yolk wash on the mooncakes.
- Step 4:Bake the mooncakes again for another 10 minutes until the mooncakes turn golden brown.
- Step 5:Remove the mooncakes from oven and set aside for 5 minutes.
- Step 6:Finally, the mooncakes are ready to serve.
