Spicy Gochujang Noodles Recipe
Serves 2
Ingredients:
- 2 tablespoons CJ-Bibigo Gochujang 500g
- 200g of HAKUBAKU Udon Noodle
- 1 cup Shiitake Mushrooms, sliced
- 1 Red Pepper, sliced
- 2 Spring Onions, thinly sliced (reserve some for garnish)
- 2 tablespoons Lee Kum Kee Premium Light Soy Sauce 500ml
- 1 tablespoon OBENTO Rice Wine Vinegar 250ml
- 1 cup Chicken or Vegetable Stock
- 2 cloves Garlic, minced
Method:
- Begin by preparing the vegetables: slice shiitake mushrooms, red pepper, and spring onions into bite-sized pieces.
- Heat a pan over medium heat and add a splash of oil. Sauté the sliced vegetables for about 5 minutes until they start to soften.
- Meanwhile, prepare the sauce: In a small bowl, combine Gochujang paste, soy sauce, rice wine vinegar, and chicken or vegetable stock. Mix well until smooth.
- Add minced garlic to the pan with the vegetables and stir to incorporate.
- Cook udon noodles according to package instructions until tender then drain and set aside.
- Pour the prepared sauce over the vegetables in the pan and toss to coat evenly.
- Add the cooked udon noodles to the pan with the sauce and vegetables. Mix until noodles are thoroughly coated and heated through.
- Serve the Spicy Gochujang Noodles hot, garnished with sliced spring onions for a vibrant finishing touch.
