- Fresh Medium sized Crab ( Swimming Crab / Brown Crab) – 2 pcs
- Fresh Ginger – 20g (Sliced into thin pieces)
- Red Onion – 4 pcs
- Garlic – 1 pc
- Onion – 1 pc
- Sunflower Oil – 1 Tbsp
- Shaoxing Cooking Wine – 2 Tbsp
- Coarse Black Pepper – 1 Tbsp
- Light Soy Sauce – 1 Tbsp
- Dark Soy Sauce – 1 Tbsp
- Sugar – 1 tsp
- Water – 250ml
- Sesame Oil – 1 tsp
- Scallion – 1 bunch ( Washed and cut into 2inch pieces)
- Corn Starch (Dissolved in water 20ml) – 1 Tbsp

Method
- Step 1: Dice the Garlic. Slice the Red Onion & Onion.
- Step 2: Wash and rinse the Crab and cut into pieces.
- Step 3: Saute the Onion, Red Onion & Garlic in Sunflower Oil over medium heat until fragrant.
- Step 4: Turn to medium-high heat. Add in the Black Pepper & Crab. Stir-fry for 2 minutes.
- Step 5: Add in the Shaoxing Cooking Wine, Light Soy Sauce, Dark Soy Sauce, Sugar & 250ml Water. Cook over medium heat for 5 minutes.
- Step 6: Turn to medium-low heat, cover the wok / pan with lid and cook for a further 10 minutes.
- Step 7: Add in the Scallion, Sesame Oil & Corn Starch Mixture. Mix well, serve immediately.
