Sweet Potato and Lotus Seed Soup

Ingredients
- Sweet Potato – 2 pcs
- Dried White Fungus – 1 pc (Soaked in water for 3 hours)
- Dried Lotus Seed – 15 pcs (Soaked in water for 3 hours)
- Dried Red Date – 2 pcs
- Dried Goji Berry – 4 pcs
- Ginger – 20g
- Rock Sugar – 40g
- Water – 2L

Method
- Step 1: Peel and chop the sweet potato. Wash and tear the soaked white fungus into small pieces. Rinse the lotus seed, goji berry & red date. Slice the ginger into thin pieces.
- Step 2: Put the Sweet Potato, White Fungus, Lotus Seed, Goji Berry, Red Date and Ginger in a large pot. Pour in 2L water and bring to boil.
- Step 3: Cover the pot with a lid. Turn to low heat and boil for 1 hour.
- Step 4: Add in the Rock Sugar and boil until it all dissolves. It’s ready to serve.
