Red Curry with Chicken

Ingredients:
- 2 tbsp Maeploy Red Curry Paste
- 400ml coconut milk
- 500g chicken breast, sliced thinly
- 1 tbsp vegetable oil
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 5-6 fresh basil leaves
- 1 tbsp fish sauce
- 1 tsp sugar
- Jasmine rice, for serving
Instructions:
- Heat oil in a pan over medium heat.
- Add Maeploy Red Curry Paste and stir-fry until fragrant (about 1 minute).
- Add half the coconut milk and bring to a gentle simmer. Add the chicken and cook until no longer pink.
- Pour in the remaining coconut milk, red bell pepper, zucchini, fish sauce, and sugar. Simmer for 10 minutes until the vegetables are tender.
- Add fresh basil leaves and stir well. Serve hot with jasmine rice for a flavourful Thai meal.
Massaman Curry with Beef
Prep Time: 15 minutes
Cook Time: 45 minutes
Serves: 4
Ingredients:
- 2 tbsp Maeploy Massaman Curry Paste
- 400ml coconut milk
- 500g beef, sliced into cubes
- 2 tbsp vegetable oil
- 2 potatoes, diced
- 1 onion, sliced
- 2 tbsp roasted peanuts
- 1 tbsp fish sauce
- 1 tbsp tamarind paste
- 1 tsp sugar
- Steamed rice, for serving
Instructions:
- Heat oil in a pan and fry the Maeploy Massaman Curry Paste until aromatic.
- Add half of the coconut milk, stir, then add the beef.
- Cook until the beef is browned on all sides.
- Add the potatoes, onion, fish sauce, tamarind paste, sugar, and remaining coconut milk.
- Simmer until the beef and potatoes are tender (about 30-40 minutes).
- Stir in the peanuts and cook for an additional 5 minutes.
- Serve hot with steamed rice.
Yellow Curry with Vegetables
Prep Time: 10 minutes
Cook Time: 20 minutes
Serves: 4
Ingredients:
- 2 tbsp Maeploy Yellow Curry Paste
- 400ml coconut milk
- 1 tbsp vegetable oil
- 1 small sweet potato, diced
- 1 red bell pepper, sliced
- 1 carrot, sliced
- 1 zucchini, sliced

- Fresh coriander, for garnish
- Jasmine rice, for serving

- Add half the coconut milk and stir. Then, add sweet potato and carrot, cooking for 5-6 minutes.
