Step 1: In a pot, bring some water to a boil and cook the ramen noodles as indicated on the packet. Usually 3-5mins. Once cooked, pour the noodles through a sieve and rinse under cold tap water for 3 to 4 mins and set aside.
Step 2:In a pestle and mortar, add the roasted sesame seeds and grind until it is like a powder. Around 2mins. Transfer this to a bowl and add all the other salad dressing ingredients to make a sauce. Mix well.
Step 3:In a large bowl, add the cucumber, cherry tomatoes, baby gem lettuce, wakame and the cooked ramen noodles. Pour the sauce over the salad and mix well using tongs. Ready to eat.
