1 tbsp Kimchi Juice (from the kimchi jar, optional for extra flavor)
1/2 Brown Onion (thinly sliced)
1 Carrot (julienned)
1/2 cup Mushrooms (sliced, optional)
1/2 cup Spinach or Bok Choy (optional)
2 Garlic Cloves (minced)
2 tbsp Soy Sauce
1 tbsp Gochujang (Korean red chili paste) or Sriracha (optional for heat)
1 tsp Sesame Oil
1 tbsp Toasted Sesame Seeds (for garnish)
1 Green Onion (chopped, for garnish)
Instructions:
Cook the Udon Noodles:
If using frozen udon, cook the noodles in boiling water for 1-2 minutes until tender. Drain and set aside. If using fresh udon, follow package instructions.
Stir-Fry the Vegetables:
Heat vegetable oil in a large pan or wok over medium-high heat.
Add the sliced onion, carrot, and mushrooms (if using) and stir-fry for 3-4 minutes until the vegetables are softened.
Add the minced garlic and cook for another minute.
Add Kimchi:
Stir in the chopped kimchi and kimchi juice (if using). Stir-fry for 2-3 minutes, allowing the flavors to combine.
Add Noodles and Sauce:
Add the cooked udon noodles to the pan, along with the soy sauce, gochujang (or sriracha), and sesame oil.
Toss everything together and stir-fry for another 2-3 minutes until the noodles are well coated and heated through. Add spinach or bok choy at this stage if desired, allowing it to wilt.
Garnish and Serve:
Remove the pan from heat and garnish with toasted sesame seeds and chopped green onions.
Enjoy your savory and tangy Kimchi Udon Noodle Stir-Fry!
This dish is great for a quick meal, combining the chewy texture of udon with the bold flavors of kimchi and a hint of spice.
