Szechuan Prawns Recipe

A fiery and flavourful dish that delivers a punch!

Ingredients:

• 500g large prawns, peeled and deveined
• 2 cloves garlic, minced
• 1 inch piece of ginger, grated
• 2 dried red chilies, crushed
• 1 tablespoon Szechuan peppercorns, toasted and ground
• 1 tablespoon soy sauce
• 1 teaspoon rice wine vinegar
• 1 teaspoon sugar
• 1 teaspoon cornstarch
• 2 tablespoons vegetable oil

Instructions:

1. Marinate the Prawns: In a bowl, combine prawns with half of the garlic, ginger, Szechuan peppercorns, soy sauce, rice wine vinegar, sugar, and cornstarch. Marinate for 15-30 minutes.
2. Heat the Oil: Heat vegetable oil in a wok or large skillet over high heat.
3. Stir-fry the Prawns: Add the marinated prawns to the hot oil and stir-fry for 2-3 minutes until they turn pink and are cooked through. Remove from the wok and set aside.
4. Sauté the Aromatics: In the same wok, add the remaining garlic and ginger and stir-fry for 30 seconds until fragrant. Add the crushed red chilies and stir-fry for another 30 seconds.
5. Combine and Serve: Return the prawns to the wok and toss to coat with the sauce. Serve immediately with steamed rice.

Tips:

• For a spicier dish, add more red chilies or adjust the amount of Szechuan peppercorns.
• You can also add other vegetables like bell peppers, onions, or snow peas to the dish.
• Serve with a side of steamed broccoli or bok choy for a balanced meal.
