2 Spring Onions, thinly sliced (reserve some for garnish)
2 tablespoons Lee Kum Kee Premium Light Soy Sauce 500ml
1 tablespoon OBENTO Rice Wine Vinegar 250ml
1 cup Chicken or Vegetable Stock
2 cloves Garlic, minced
Method:
Begin by preparing the vegetables: slice shiitake mushrooms, red pepper, and spring onions into bite-sized pieces.
Heat a pan over medium heat and add a splash of oil. Sauté the sliced vegetables for about 5 minutes until they start to soften.
Meanwhile, prepare the sauce: In a small bowl, combine Gochujang paste, soy sauce, rice wine vinegar, and chicken or vegetable stock. Mix well until smooth.
Add minced garlic to the pan with the vegetables and stir to incorporate.
Cook udon noodles according to package instructions until tender then drain and set aside.
Pour the prepared sauce over the vegetables in the pan and toss to coat evenly.
Add the cooked udon noodles to the pan with the sauce and vegetables. Mix until noodles are thoroughly coated and heated through.
Serve the Spicy Gochujang Noodles hot, garnished with sliced spring onions for a vibrant finishing touch.
