Step 1: Peel and chop the sweet potato. Wash and tear the soaked white fungus into small pieces. Rinse the lotus seed, goji berry & red date. Slice the ginger into thin pieces.
Step 2: Put the Sweet Potato, White Fungus, Lotus Seed, Goji Berry, Red Date and Ginger in a large pot. Pour in 2L water and bring to boil.
Step 3: Cover the pot with a lid. Turn to low heat and boil for 1 hour.
Step 4: Add in the Rock Sugar and boil until it all dissolves. It’s ready to serve.
