2 tablespoons mayonnaise (Japanese Kewpie mayonnaise preferred, but regular mayonnaise works too)
For Rolling:
4 sheets nori seaweed
Sesame seeds, for sprinkling
Equipment:
Sushi rolling mat
Sharp knife
Large bowl
Rice paddle (optional, but helpful)
Instructions:
Prepare the Sushi Rice:
Rinse the Rice: Rinse the rice in cold water until the water runs clear. Drain well.
Cook the Rice: Add the rinsed rice and water to a pot. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
Rest the Rice: Remove from heat and let rest for 10 minutes, covered.
Season the Rice: Transfer the rice to a large bowl. Mix in the rice vinegar, sugar, and salt. Use a rice paddle or a wooden spoon to gently fold the mixture until the rice is evenly coated and slightly cooled.
Prepare the Filling:
Cut the Avocado and Cucumber: Cut the avocado and cucumber into long, thin strips.
Mix the Crab Salad: Combine the imitation crab meat and mayonnaise in a small bowl. Mix well.
Assemble the Sushi Rolls:
Lay the Nori: Place a sheet of nori seaweed on the sushi mat, shiny side down.
Spread the Rice: Spread a thin layer of sushi rice over the nori, leaving a 2-3 cm gap at the top edge.
Add the Filling: Place a strip of avocado, cucumber, and crab salad along the bottom edge of the rice.
Roll the Sushi: Lift the bottom edge of the nori and roll it over the filling, using the sushi mat to help you roll tightly. Continue rolling until you reach the top edge of the nori.
Seal the Roll: Moisten the top edge of the nori with a little water to seal the roll.
Sprinkle with Sesame Seeds: Sprinkle sesame seeds on the outside of the roll.
Cut the Roll: Use a sharp knife dipped in water to cut the roll into 8 equal pieces.
Tips:
To prevent the knife from sticking to the sushi, dip it in water before each cut.
If you don't have a sushi rolling mat, you can use a piece of cling film.
For a more authentic flavor, use Japanese mayonnaise.
