1 tbsp Kimchi Juice (from the kimchi jar, optional for extra flavor)
1/2 Brown Onion (thinly sliced)
1 Carrot (julienned)
1/2 cup Mushrooms (sliced, optional)
1/2 cup Spinach or Bok Choy (optional)
2 Garlic Cloves (minced)
2 tbsp Soy Sauce
1 tbsp Gochujang (Korean red chili paste) or Sriracha (optional for heat)
1 tsp Sesame Oil
1 tbsp Toasted Sesame Seeds (for garnish)
1 Green Onion (chopped, for garnish)
Instructions:
Cook the Udon Noodles:
If using frozen udon, cook the noodles in boiling water for 1-2 minutes until tender. Drain and set aside. If using fresh udon, follow package instructions.
Stir-Fry the Vegetables:
Heat vegetable oil in a large pan or wok over medium-high heat.
