200g Shrimp or Chicken (optional, or substitute with tofu for a vegetarian version)
2 Eggs (lightly beaten)
1/2 cup Bean Sprouts
1/4 cup Green Onions (chopped)
1/4 cup Crushed Peanuts (for garnish)
2 tbsp Tamarind Paste
1 tbsp Fish Sauce (or soy sauce for vegetarian)
1 tbsp Oyster Sauce
1 tsp Brown Sugar
1 tbsp Soy Sauce
1 tsp Chili Flakes (optional, for heat)
1 Lime (cut into wedges)
Fresh Coriander (for garnish)
Instructions:
Prepare the Noodles: Soak the rice noodles in hot water for 10-15 minutes or until soft but firm. Drain and set aside.
Make the Pad Thai Sauce: In a small bowl, mix tamarind paste, fish sauce, oyster sauce, soy sauce, and brown sugar. Stir until the sugar dissolves. Set aside.
Cook the Protein: Heat 1 tbsp of oil in a wok or large pan over medium heat. Add shrimp, chicken, or tofu and cook until done. Remove from the pan and set aside.
Stir-Fry: Add another tbsp of oil to the pan, followed by the minced garlic. Sauté for about 30 seconds until fragrant.
Cook the Eggs: Push the garlic to the side and pour the beaten eggs into the pan. Scramble until cooked through.
Combine Ingredients: Add the drained noodles to the pan, followed by the cooked protein. Pour the Pad Thai sauce over the noodles and toss everything together, making sure the noodles are well coated in the sauce.
