Stir-Fried Chinese Chive with Shrimp, Squid, and Cashews Recipe
A flavourful and satisfying dish!
Ingredients:
200g fresh Chinese chives, cut into 3-inch lengths
200g fresh shrimp, peeled and deveined
200g fresh squid, cleaned and cut into rings
100g cashews, roasted
2 cloves garlic, minced
1 tablespoon ginger, minced
2 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon rice wine
1/2 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
Vegetable oil for frying
Instructions:
Prep the Ingredients: Heat a wok or large skillet over high heat. Add a little vegetable oil and stir-fry the garlic and ginger until fragrant.
Cook the Seafood: Add the shrimp and squid to the wok and stir-fry until cooked through. Remove from the wok and set aside.
Stir-Fry the Chives and Cashews: Add a little more oil to the wok and stir-fry the Chinese chives and cashews for 30 seconds, or until the chives turn bright green and the cashews are slightly toasted.
Combine and Season: Return the cooked seafood to the wok and add the soy sauce, oyster sauce, rice wine, sesame oil, and red pepper flakes. Stir-fry for another 30 seconds until well combined.
Serve: Serve immediately with steamed rice or noodles.
Tips:
For a spicier dish, add more red pepper flakes or a pinch of Szechuan peppercorns.
You can substitute the shrimp and squid with other seafood, such as scallops or fish fillets.
Serve with a side of chili oil or soy sauce for dipping.
