Ingredients:
500g large prawns, peeled and deveined
2 cloves garlic, minced
1 inch piece of ginger, grated
2 dried red chilies, crushed
1 tablespoon Szechuan peppercorns, toasted and ground
1 tablespoon soy sauce
1 teaspoon rice wine vinegar
1 teaspoon sugar
1 teaspoon cornstarch
2 tablespoons vegetable oil
Instructions:
Marinate the Prawns: In a bowl, combine prawns with half of the garlic, ginger, Szechuan peppercorns, soy sauce, rice wine vinegar, sugar, and cornstarch. Marinate for 15-30 minutes.
Heat the Oil: Heat vegetable oil in a wok or large skillet over high heat.
Stir-fry the Prawns: Add the marinated prawns to the hot oil and stir-fry for 2-3 minutes until they turn pink and are cooked through. Remove from the wok and set aside.
Sauté the Aromatics: In the same wok, add the remaining garlic and ginger and stir-fry for 30 seconds until fragrant. Add the crushed red chilies and stir-fry for another 30 seconds.
Combine and Serve: Return the prawns to the wok and toss to coat with the sauce. Serve immediately with steamed rice.
