Baking soda, or Bicarbonate of soda, is an alkalic substance which is used in the preparation of cakes and breads by adding it to the dough along with an acidic ingredient like cream of tartar, yoghurt, buttermilk or milk. The dough mixture is expanded because of the carbon dioxide formed by the acid-alkali interaction, and when it is cooked, air replaces carbon dioxide, giving cakes and breads a touch of smoothness.
