Lotus root is actually the stem of lotus plant. Known as ‘renkon’, lotus root has a multitude of applications in Chinese cuisine. Dried lotus root can be made into lotus starch which is also useful in Chinese cooking method. The botanical name for lotus is ‘Nelumbo nucifera’. In both China and Japan, lotus roots are used in soups, or added into syrups and vinegar. A special beverage of lotus root tea is popular in Korea. Lotus flower is culturally significant in Indian tradition as well.
